In what ways could I use this with my PSP? Could I use this with F00 f00's ps2 controller mod? Or could I hook this up to the psp's usb port and use usbhost in some way?

In absolutly no way, usbhost has nothing to do with a PS/2 to ps2 controller converter, oh and no.
