I remember a guy made a mod like that and called it jumbo ds.
I'll try to find it and post it.
I've only found the joystick article.In his website he explains almost everything as I remember.

I am planing on making one of these someday as I already have a screen for it, just the little chips cost so much.

the FPGA seems to only control the porting of the touchscreen, if i am correct. and in any case there are much smaller FPGAs to be acquired, i have kind of partnered up with someone to tackle this, but could use the help of anyone else as well!
