I'd need this answered, first.

What kind of form factor is the 360 motherboard, if any? Is there a way I could take motherboard tray from a PC and mod it to fit a 360 motherboard?

All most any MicroATX, MiniATX Formfactor MBs should Fit. If your planing on making your old 360 in to a PC Do it. Cause that is what Im gonna be doing. Adding the Drive wont be hard if you use a MicroATX or MiniATX, You can also get a laptop HDD and Keep in in the Old 360 HDD case. lol

Nah I was going to put my 360 into a PC case. Hence why I wanted to know if it would be easy to mod a MB tray to fit a 360 MB haha.

Well first of all I'm not trying to show off since it is my area of expertise and career field. To now answer your question, it should be easy enough for you to do it a case will not fit the MB holes. All you would need to do is get a drill, drill the holes where you want them and tap the holes so you can screw in the little gold MB holders.

get a drill and line up the xbox mobo and drill the holes you need. or you can mark the holes first then drill

yes, just drill the holes to match the 360 holes. When I say tap the holes I mean to use a tool called a tap which threads a hole so a screw can be screwed into it. Then you can screw the little gold MB holder thingys (dont know the exact name for em) into the newly drilled holes and then put the board up there and then screw it down

most computer cases have a motherboard tray that is about 1/2 or so away from the actual case side, some even have removable ones. If you could get your hands on one of those that would probably be ideal
