you have 2 choices,
1) while you have the controller connected you open it and try to bend the plastic of the analog to make sure to adjust the drift.
2) smd potentiometer 50k, you weld it to the 3 pins of the sensor and adjust it with a screwdriver.

You have to manually adjust it.
Remove the potentiometer pieces from both axis and cut the plastic piece which prevents the piece from moving. This way you can adjust it manually until you center it.
I'll also consider the 50k smd potentiometer as mentioned above, it seems like a good option
