Video Signal

Hey I have an idea for a project that would integrate into a VGA line (for example from a computer to a monitor or projector) and I want to do a little signal processing/adjusting based on some other sensors and things.

I was curious if anyone has any good ideas on where to start as far as a processor or maybe a prebuilt board? I have no idea what kind of processor would do good in this situation. Any ideas?
