450g prawns
2 medium onions
1 clove garlic
pinch v-tsin
tsp salt
2 bay leaves
pinch dried/tbsp fresh thyme
½ tsp dried/1 tbsp fresh tarragon
large tin tomatoes
1 dsp tomato purée
slurp of sherry
10-15g butter
½ tsp chilli
brandy
In a hot pan, with a little oil, add the prawns, garlic, v-tsin and tarragon, and sauté for a few minutes
Separately, sauté the onions with the thyme, bay leaves and a little salt.
Add the juice, and crushed flesh, of the tomatoes, along with the tomato purée, sherry and butter.
Then add the prawns, chilli and (if necessary) salt, then add the brandy and simmer for a short while, until the prawns are cooked.
just before serving add a little cream or natural yoghurt
Serve with rice or pasta, and veg or salad to taste.
Or use diced chicken thigh: I also add some sliced mushrooms
