Ingredients
¾ lb Pork cubed
1 large crescent cut onion
Handful of Chinese mushrooms soaked
2-4 oz cashews
1 tin water chestnuts - halved
2 tblsp thin Soy Sauce
1tblsp corn flour
1 pinch v tsin
1 dsp oil
Bunch spring onions
Method
Put Pork to marinade in soy, corn flour, and oil.
Separately cook all components
Cook mushrooms in dsp soy & a little oil for 5- 10 mins.
Lightly fry cashews till light brown and then put to one side.
Fry Pork in a little oil till cooked.
Fry onions in a little oil add shake of light soy and v tsin and a small shake of sugar cook lightly but still crispy.
Cook water chestnuts with a little sugar & soy sauce.
Return Pork to pan with cashews, onions, mushrooms – mix well together. Adjust seasoning serve sprinkled with chopped spring onions.

Serve with rice
