2 egg yolks
2 tblsp Lemon juice
Pinch salt
Pinch cayenne pepper
4 oz butter cut into small pieces
Serve with salmon or fish or poached eggs
Beat the yolks with lemon juice salt cayenne
Put butter in bowl and microwave till gently melted
Whisk butter into egg mixture microwave at 50% for 15 secs at a time whisking well between each time slot till the mix looks like lightly whipped cream let stand for 2 mins whisking regularly –
