2 Lemons
2oz Caster sugar
1 Egg
4 oz plain flour
Pinch salt
½ pt milk
Put flour into bowl with salt make a hollow in centre and add egg – gently gathering flour together as you add milk slowly blend together till all is incorporated – whisk briskly till all lumps out.
Lightly butter pan and fry a small amount of batter for each pancake till it is cooked -flip and cook other side
Serve warm with sugar and lemon
