4 Lemons
6oz Caster sugar
½pt Double Cream
6 Eggs
4 lvl tsp Gelatine
Beat yolks, sugar, lemon rind and juice
Mix gelatine with 6 tblsp water, place over hot water until melted
Allow to cool, then pour into lemon mixture
Whip cream, fold into mixture; whisk egg whites, fold into nearly set mixture
Chill, and serve either in a bowl or individual portions – may be frozen
